Oriental Marinade

This simple marinade is a quick and easy way to have a no-hassle, mid-week meal. It is really good on poultry, and we recommend chicken skewers with vegetables and pineapple chunks. The chicken and the vegetables have different cooking times, so don't combine them on one skewer. Instead, make up meat skewers, and vegetable skewers seperately, and combine when they are both done. Serve with rice and a vegetable, and you're done!

6 cloves garlic, pressed
1-2 inches of fresh ginger, grated
1/2 tsp 5-spice powder
1/4 tsp black pepper
1/4 cup soy sauce
1/2 cup pineapple juice
Dash of sesame oil

Combine all ingredients in a small mixing bowl, and whisk well. Place meat or vegetables in a Ziploc bag, pour marinade on top, and let set for at least 2 hours. Pineapple has a tenderizing enzyme that works well on poultry, and it works in a relatively short amount of time.

Fire up your grill using the indirect, two-level configuration with one side hot and one side warm. Start the meat over the fire until nice grill marks form (about 2-4 mins per side, depending on the type of meat). Then move it to the warm side of grill and let it finish cooking away from the flames. The juice is high in sugar, so watch the meat as it cooks to make sure it doesn't burn.
