Jerk Marinade

Marinate pork chops or steaks overnight, chicken for 4-6 hours, fish and vegetables for about 2 hours. Adjust the amount of heat in the marinade by adjusting 1) the amount of jerk you use, or 2) the amount of time the food stays in the marinade.

We prefer Walker Woods Jerk Seasoning - not the marinade or barbecue sauce - over any other commercial jerk. If you can't find it in your supermarket, they have a Web site. A small bottle lasts a long time....

1/2 cup soy sauce

1 Tbs. olive oil

2 Tbs. honey

juice of one fresh lemon

1 Tbs. Walker's Woods Jerk Seasoning

2 cloves of garlic, minced or pressed

2" fresh ginger, grated fine
